Fielding’s Wood Grill has become widely recognized as one of the top restaurants in the Woodlands area, and for good reason. Chef Edel Goncalves’s kitchen has become known for innovative takes on the kind of food that Texans crave. His European perspective brings a fresh approach to the classics we all enjoy. Now Chef Edel has created his version of the Tex-Mex classic, fajitas, and we were not disappointed.
Traditionally, fajitas are beef skirt steak, marinaded and grilled, topped with peppers, onions, pico de gallo, and wrapped in a flour tortilla.
Chef Edel’s approach is unique. The high quality outside skirt steak is marinated in bourbon, imparting a savory/sweet flavor that is addictive. Grilled onions and sliced poblano peppers provide a smoky, tangy counterpoint. Housemade guacamole, adobo sauce, a smoky salsa verde, and cotija cheese let you create your perfect bite, wrapped in a fresh housemade tortilla.
The result is a unique and decidedly upscale spin on the Tex-Mex classic. Chef Edel melds unique, surprising flavors skillfully; this is a delicious fajita that’s unlike any other we’ve ever sampled. Everyone who tasted it was quick to go back for seconds.
Fielding’s is generous with the portion for two; it could easily feed three people, although we can’t imagine leaving any leftovers. But we did save room for dessert; Fielding’s superb Tres Leches cake is included as part of the dinner.
The entire meal for 2 is $39, which we think is an outstanding value. The only thing we added were a pair of Fielding’s cocktails-to-go: A cool, refreshing Passionfruit Margarita, and their benchmark Old Fashioned, which may be the best in the Woodlands.
Cary Attar, the owner of Fielding’s is known for being a perfectionist, and that’s very comforting at times like these. His staff is masked, the restaurant is thoroughly sanitized, and curbside service is available if you’d rather stay in your car. We applaud this option.
Our search for the best take-out options in the Woodlands has begun at Fielding’s Wood Grill, and we discovered a unique, upscale meal that will appeal to hungry Texans while not breaking the bank. Kudos to Cary, Edel, GM Adam, and the rest of the Fielding’s staff for a job well done.
