Houston Restaurant Weeks is going strong. We continue HRW 2021 with a visit to one of the finest restaurants in the Woodlands, Fielding’s Local. Executive Chef Edel Gonçalves Owner Cary Attar have pulled out all the stops to put together a special menu for the event. Here’s what we sampled:
First Course
Summer Corn Gazpatcho – We started with this Southern spin on the classic French summer soup. Summer Corn Gazpacho was cool (of course), brisk, and refreshing, with aromatics that were lightly herbal. Creamy avocado, cilantro, cornbread crumbs, and just a hint of vanilla finishes this dish with a festive, summery bite.
Watermelon Wedge – Watermelon is elevated to the next level here. Chef Edel layers a wedge of watermelon with yellow cherry tomatoes, feta, basil, Parma ham, and passionfruit essence. The result is a bright, summery dish, balanced with the richness of the soulful Parma and the salt of the feta. Watermelon lovers will rejoice, and this dish may just create some new watermelon fans… as long as it’s watermelon presented by Chef Edel.
Cauliflower Hummus is also on the menu.
Second Course
Arctic Char – This light, cold water fish (think trout or salmon) is surmounted with a thin brioche crust, then perched atop Tuscan beans, kale, and a lush agrodolce sauce. Italian for sweet and sour, it is the perfect foil to the savory broiled fish, the earthy Tuscan beans, and the assertive kale. The result is a rich, complex dish with layers of flavors coming together into a very satisfying whole.
Radiatore Pasta – Braised osso buco is married with al dente Radiatore shells, then dressed with a classic béarnaise butter. We think of béarnaise as an accompaniment to a filet mignon, but Chef Edel’s buttery version turns meat and pasta into a symphony. The flavor is bold without overpowering, deliciously fatty, cozy, and elegant. This is a distinctly Gallic take on pasta, and we heartily approve.

Third Course
Créme Fraiche Cloud – Sometimes simple is better. A strawberry coulis is transformed into a lake, and a créme fraiche meringue island floats surrounded by leaves of fresh basil. The result is as light as a summer breeze, tangy, and invigorating.
Iced Dulce de Leche is a smooth, creamy, rich indulgence. The classic caramelized creation is layered over graham cracker crumbs, and embellished with dehydrated pinapple. This desert is as lush as the prior option is light; whatever your preference, Fielding’s has you covered.

We were impressed and delighted at the bold choices and creative options presented by Fielding’s Local for Houston Restaurant Weeks. Their offering exemplifies the spirit of the event; it is truly an opportunity sample something unique and different and step outside your comfort zone. We think you’re going to like it out here.
