We’re the first to admit that we’re fans of Chef Edelberto Gonçalves’s cooking. This classically trained chef brings his distinctly European viewpoint to every dish he cooks, and the results are exceptional. We’ve been fortunate enough to have enjoyed Chef Edel’s cuisine many times in the past, and have especially enjoyed the wine dinners that he and Cary Attar put on at Fielding’s Local. These dinners let the chef present unique dishes that lie far outside the box.
When we heard that Fielding’s was putting on a wine dinner featuring the wines of Alejandro Bulgheroni, we knew we had to attend. The vintner came to Napa to create a classic Cabernet Sauvignon, and he purchased land at the base of Howell Mountain with the perfect microclimate for these finicky grapes. Today, the estate has grown and crafts wines with fruit from multiple growing regions around the valley, giving the winemakers the raw materials to craft memorable wines with stunning depth and complexity.

Chef Edel presented four courses, with wine pairings for each.
Sea Scallop
With bouillabaisse, garlic toast & rouille, leeks & potato, fennel pollen. Expertly cooked scallop accented with the lush bouillabaisse, an enticing beginning to the meal.

Radiatore Pasta
King trumpets, foie gras creme. A very simple dish, executed superbly. The foie gras creme was smooth, lush, rich, and complex. Chef Edel’s pastas should never be overlooked.

Dry Aged 44 Farms Ribeye, Two Ways
30 day and 180 day dry aged ribeye, celeriac mousseline, cabernet butter. The 180-day ribeye was the star of the show; deep, beefy flavors, powerful flavors.

Roquefort Cheesecake
Pistachio nougatine, Amarena cherry syrup. A surprising and tart ending to a delicious meal.

Wine dinners at Fielding’s Local give Chef Edel a chance to flex his culinary muscles, and this one was no exception. We really enjoyed the experience, and urge anyone who appreciates fine food to attend the next one. Most sell out completely, so don’t hesitate when one pops up. You can thank us later.
