Goode Company Fish Camp arrives in the Woodlands on May 3, 2022. It’s a brand new seafood concept from the iconic Houston restaurant group. Fish Camp evokes the kind of costal seafood spots that have dotted the Gulf Coast for decades, but with a distinctly modern twist.
“Like all Goode Company concepts, Goode Co. Fish Camp takes inspiration from my family’s heritage, history and love of food and entertaining. This newest concept is especially personal to me because it’s inspired by time spent fishing with my dad on Christmas Bay,”
Levi Goode, President
The beautifully decorated room is divided into a main dining area and an expansive oyster bar, providing patrons with a relaxed, comfortable spot to get their fish on. We attended a preview dinner the week before the opening (in order to get the kinks worked out, many restaurants do this) and these are our impressions.
The food is straight from the heart of the Gulf Coast: Fish, crab, shrimp, and other shellfish are the centerpieces. Styles range from deep fried to mesquite grilled to simmered for hours, and light, fresh dishes are well represented. This isn’t pretentious seafood, but the ingredients are fresh and very high quality, and the kitchen displays impressive technique in the handling and preparation.
Campechana de Mariscos
This iconic Goode dish is a beautifully executed cocktail of shrimp or crab (we chose both) prepared in the Mexican style with plenty of pico de gallo, avocado, and roasted Anaheim peppers. This is the dish that put Goode Co on the Texas seafood map, and it’s nothing short of outstanding.
Deviled Gulf Crab
Jumbo Gulf lump crabmeat is gently seasoned, folded in with the Louisiana trinity (onions, bell peppers, celery) and baked in the shell. Served with a light béarnaise sauce, this elegant dish delighted our local crab lover.
Fish Camp Shrimp Remoulade Salad
Jimmy’s Gulf Shrimp, cold boiled, are tossed over a wedge of iceberg and dressed with a tangy red remoulade, then finished with avocado, tomato, boiled egg, dill, and croutons. A light, fresh starter that pays tribute to Gulf Coast traditions.
Hearth Roasted Yellowfin Tuna
A meticulously roasted slab of yellowfin (perfectly mid-rare, at our request) was topped with three of Jimmy’s roasted Gulf Shrimp, and dressed with a spectacular Veracruzana sauce. This dish is a master course in seafood, and the sauce was a perfect complement to the hearty flavors brought out by the roasting.
Service was very professional, friendly, and knowledgable… the Goode team has been doing this for decades, and it shows. Rarely do you see this level of polish even after a few months of operation, but GM Joshua Kaine has built an organization that is already ready for prime time.
This preview of Goode Co Fish Camp left a very good taste in our mouths, in more ways than one. A beautiful room, delicious, expertly prepared food, and polished, friendly service come together to create an impressive experience. Goode has another winner on their hands, and we look forward to returning and telling you more about this impressive new establishment.
