The Kitchen, the fast casual concept from Chef Austin Simmons and the team behind Tris, is known for its innovative burgers. Creative dishes like the Indian-inspired Vindaloo Burger have been delighting guests at this upscale fast casual establishment for years.
Now Chef Austin has taken burgers in a decidedly luxurious direction: Lobster.
The formula: The chef’s proprietary Gyulais beef (a wagyu/charolias hybrid) is ground, formed into a patty, and smashed on the griddle. It’s enrobed in a sheet of high quality American cheese, and dressed with a sophisticated miso tomato aioli, lettuce, and scallions. To this unique foundation the chef adds a helping of butter-poached lobster, and the entire creation is perched atop a pillowy brioche bun.
The result is beautifully beefy burger with a gently buttery lobster counterpoint. The miso tomato aioli is an inspired touch, adding a spritz of acid to a rich, smooth, soulful burger.
