Serial restaurateurs Adam and Wannalee Gorelick have opened Noe’s Cafe in Spring. Located right across Spring Steubner Road from their successful Charm Thai Bistro, Noe’s brings a casually upscale approach to breakfast and lunch to the Spring area.
The modern, airy setting features walk-up ordering and plenty of seating both inside and outside.
Adam Gorelick is a serious talent in the kitchen; the man sweats the details. From Kraftsmen Baking breads and pastries to excellent housemade sauces and gelato, the offerings at Noe’s are all very high quality.
Adam’s make-it-here approach results in some beautifully conceived plates. During the soft opening phase we sampled some breakfast entries; here are our impressions.
Chicken & Waffles
Liege waffles and hand-cut, hand-breaded chicken tenders are the basis of Adam’s spin on Chicken and Waffles The liege batter has to be proofed overnight, and the result is a dense, delicious waffle that is different than you’ll find at most breakfast spots.
The hand-breaded chicken is marinated and seasoned, and the result is a deliciously savor bite of chicken that balances the sweetness of the waffle. Bits of crispy bacon and real maple syrup complete the dish.
Croque Madame
Freshly toasted Kraftsmen Brioche, ham, a touch of dijon mustard, house béchamel, and cave-aged gruyere come together beneath an over easy egg, and the result is delicious.
Noe’s attention to detail really shines through on this classic French dish.
Noe’s Cafe is a great addition to the rapidly developing Spring Steubner corridor. The talented team behind Charm Thai Bistro looks to have another hit on their hands.
